Ingredients~
1 c. cottage cheese
1 c. grated apples (about 2 apples)
1 tbsp. honey
1/2 tsp. cinnamon
4 eggs, seperated
1/2 c. flour
1/4 c. wheat flour
1 tsp. lemon juice
1/4 tsp. nutmeg
1/2 tsp. salt
* Can be served with maple syrup, sour cream, yogurt, fresh fruit, or cinnamon sugar.
Directions~
1. In mixing bowl, combine all ingredients except for the egg whites.
2. In seperate bowl beat egg whites till stiff, fold gently into batter.
3. Fry on greased (butter) skillet at medium to medium low heat until brown on both sides. These pancakes cook slowly, about 10 minutes on each side.
